JENNIFER LOPEZ was supposed to serve as a guest judge at the taping of the "Project Runway" season finale on Friday . . . but she backed out at the last minute due to a "foot injury".

The show's "fashion mentor", TIM GUNN, took her place.

But despite what Jennifer's rep called a "slight ankle injury", she was able to compete in a TRIATHLON on Sunday.

She finished the triathlon a half-mile swim, an 18-mile bike ride and a four-mile run . . . in two hours, 23 minutes and 28 seconds. Here's some video
