CATERING
1. A catering representative must be present at all times.
2. Before serving, all food and ice must be inspected for hair, package paper, etc., and all catering staff must wear hair nets.
3. All drinks should be iced down 20 minutes prior to serving in large trash containers lined with plastic bags. These containers must be restocked with fresh ice and beverages throughout the day. Dressing room tubs must have fresh ice throughout the day.
4. Lunch and dinner meals are to be served by caterer, buffet style.
5. All entrees will be advanced prior to the show with the Tour Representative.
6. All lunch and dinner must be served with meal tickets (the catering representative must collect the tickets). Tickets will be issued by the Promoter Representative.
7. Total number of towels needed for the day of the show:
(PLEASE DO NOT Rent or Purchase towels unless instructed in writing by Promoter representative)
9 Dozen bath size towels (48" x 22" – Crew)
8 Dozen hand size towels (26" x 17" – Artist)
20 Bars of soap for showers (Lever 2000 anti-bacterial soap or Zest)
8. Caterer must have breakfast, lunch, dinner, and dressing rooms up and ready 15 minutes prior to scheduled time. If any of the meals are late or the rider requirements not fulfilled by the caterer, any meal penalties or other charges will be the responsibility of the caterer and/or purchaser.
9. All catering invoices are to be billed to the promoter
10. Please try to avoid the frying of food in daily meals unless it is necessary and include lowfat cooking products and condiments.
11. All juices in dressing rooms should be in boxes unless otherwise specified.
SPECIAL NOTE: ALL DRINKS ARE TO BE ICED PRIOR TO PLACEMENT IN THE DRESSING ROOMS. PLEASE SUPPLY ONE SMALL TUB OF CLEAN ICE FOR DRINKS. (THERE SHOULD BE SUFFICIENT QUANTITIES OF COLD BEVERAGS, CHERRY CATORADE, SPRING WATER, MILK THROUGHOUT THE DAY PLUS COFFEE, HOT TEA / HOT CHOCOLATE AND SUPPLY OF CUPS.)
PLEASE HAVE ROOMS SETUP ONE AND A HALF HOUR BEFORE SHOWTIME. ALL CONFIMENTS INCLUDING SALT, PEPPER, CATSUP, MUSTARD, BUTTER & MAYONNAISE, REAL PLATES, KNIVES, FORKS, SPOONS, NAPKINS, 12 OUNCE PLASTIC DRINKING CUPS FOR EACH DRESSING ROOM.
TABLES SHOULD BE COVERED WITH CLOTH LINENS AND SET WITH GLASSES, REAL DINNERWARE (PLATES, BOWLS, SILVERWARE) AND CLOTH NAPKINS (NO PAPER PLATES)
